Black Bean and Corn Salsa ..

Here are two recipes to make this delicious Black Bean and Corn Salsa dip. The original recipe came from Teeny's kitchen (Thank you, Teeny!) and we then modified it a bit to our, Kiddo's kitchen, taste. This is a wonderful example of how easy it is to adjust an excellent recipe to a particular culinary desire.

From Teeny's Kitchen ..

Ingredients needed:

  • 2 [15 oz] cans Black Beans (drained)
  • 1/2 Onion, finely chopped
  • 1/3 Green Pepper, finely chopped
  • 1 teaspoon Salt
  • Cayenne pepper
  • Olive oil
  • Dash of Cumin
  • 1 [12 oz] can of White Corn (drained)
  • 1 Garlic clove crushed
  • 1 Tomato chopped
  • 1 teaspoon Black pepper
  • 2 tablespoon Lime juice
  • Fresh Parsley chopped
  • 1/4 to 1/2 jar of medium Salsa

From Kiddo's Kitchen ..

Ingredients needed:

  • 2 [15 oz] cans Black Beans (thoroughly drained)
  • 1 small to medium Onion finely chopped
  • 1 Red, or Yellow, or Orange Pepper (or any combination thereof), finely chopped
  • 1 to 2 teaspoon Olive oil, extra virgin or light
  • thin layer of Cumin
  • 1 [12 oz] can of White Corn (thoroughly drained)
  • 1 Garlic clove crushed or equivalent in garlic powder
  • 1 teaspoon Black pepper
  • 2 tablespoon Lime juice
  • Fresh Parsley chopped
  • 1 jar of medium Salsa*

* = We currently are using the Tostito's brand, but any tasty version of your choice could be used. Feel free to experiment.
