This is the stuffing that I make for most any occasion .. it is quite good and you can work it with optional extras if you want without hardly any problems.
- Butter (1 whole stick - 1/4 lb.)
- 2 onions
- Pepperidge Farm Seasoned Stuffing (16 oz bag)
- Several handfuls of Cheezits (cheddar cheese crackers)
- Lemon & Pepper Seasoning
- 1/2 tspn Mrs. Dash Table Blend Seasoning
- Mushrooms (4 oz canned, diced - optional ingredient)
- 1/4 to 1/2 tspn Basil
- 2 cups boiling water
- 2 eggs
- 1/2 heaping tspn or 3 diced cloves of garlic
(note - tspn is short for teaspoon)
Place the stick of butter and the garlic into a small saucepan. Slowly melt the butter. While the butter is melting, dice the onion into small pieces. Add the onions to the butter and garlic. You could also add the mushrooms to this mixture. Slowly cook this mixture until the onions have gone soft.
While the butter mixture is melting/heating, dump the bag of stuffing into a large bowl. Take your several handfuls (about 5 handfuls of between 5 and 10 Cheezits) and crush them up into crumbs. Add these to the bowl. Mix the stuffing and Cheezits, then add the Lemon & Pepper seasoning, the Mrs. Dash seasoning, and the basil. Mix this all together.
When the butter is melted and the onions are soft, crack the two eggs into the dry stuffing mixture and carefully pour about 1 cup of boiling water on top. With a wooden spoon mix the eggs, water, and stuffing mix; then add the butter mixture, and mix the whole lot again. Slowly, in 1/2 cup doses, add the remaining boiling water while mixing.
You should have a slightly damp mixture now .. be careful not to have too wet of a mixture otherwise the whole thing will just become one big clump of stuffing. If the mixture is still too dry, carefully add a bit more boiling water (no more than 1/2 cup) to the mixture .. mix thoroughly.
This amount will feed roughly 4 adults and 4 kids easily .. especially if they are hungry.
