Mike's sausage making ..
My story of sausage making begins because I became tired of not having a local butcher which can offer a variety of sausages.
Growing up in Germany, plus spending many years stationed in England, I became accustomed to having a huge variety of sausages available. Moving to New Hampshire, whose primary ethnic groups are English, French, some Italian or Irish, the local butchers typically only offer a small variety of sausages. My options to getting a better variety of fresh sausages were to either spend a few hours to drive down into Boston or drive more than an hour one-way to some expensive specialty butchers - neither is my idea of a good time. The local and big box grocery stores, though they do carry a larger variety, carry the normal water-laden, chemical enhanced versions which simply do not hold a candle to real unadulterated sausages. And if they carry an "Artisanal" brand it is quite expensive.
Being saddened by the lack of sausages available .. other than the aforementioned poor versions of Kielbasa, and either hot or sweet Italian sausages, or a cheese/garlic sausage typically available .. I opted to learn how to make my own sausages. My belly deserves good sausages!
Rummaging through my mounds of cookbooks I found that my father had passed on to me a book about Sausages and making them. Wahoo!
I began to read it, I flipped its pages back and forth, read and re-read the information .. worked hard on not drooling on the book while reading the recipes .. and I began researching needed ingredients and items online. I made myself a wish-list for sausage making supplies, narrowed down my sources for supplies, and re-read the book again.
Finally I opted to get one of those simple starter kits with the casings, seasonings, and instructions all in one box.
I bought the necessary meat. Fitted my grinder attachment on the KitchenAid, then ground and stuffed the sausages. I put them in the smoker and patiently waited for the sausages to become cooked through.
Success! The sausages tasted great. A nice smoke flavor and a beautiful color to them .. my wife enjoyed them too. I am hooked!
